A Delicious Vegan Sandwich Filling
This vegan chickpea tuna mayonnaise is so quick and easy to make and will provide you with a delicious, filling lunch. We chose to use Follow Your Heart Vegenaise as our mayonnaise and this added the perfect creamy flavour. Lemon juice and capers then provide that necessary tanginess. We chose not to add any nori to our chickpea tuna because it has very strong taste, but this is purely down to preference.
Should you have any leftover chickpea tuna filling, it tastes superb with a crisp baked potato!
Vegan Chickpea Tuna Mayonnaise & Sweetcorn Sandwich
- 240 g chickpeas tinned
- 2 tbsp vegan mayonnaise
- 2 tbsp lemon juice
- 1 tsp dijon mustard
- 1 tbsp nutritional yeast
- ½ tbsp tahini
- ½ tbsp capers cut in half
- 80 g sweetcorn
- Drain and rinse the tinned chickpeas and tip into a shallow, flat bottomed dish. Using a fork, mash the chickpeas until they have all broken up.
- Add the mayonnaise, lemon juice, dijon mustard, nutritional yeast and tahini and mash again until fully combined. Season with salt and pepper.
- Stir in the capers and sweetcorn. Your chickpea tuna is now ready to be served in some delicious bread or on the side of a perfectly crisp baked potato.
